Sample Itinerary for Three days of fishing & Four nights stay in the Resort.

Arrive Guatemala City airport and meet by one of our staff Who will be carrying a sign with your group‘s last name  in an air-conditioned bus that is fully stocked with refreshing beverages. One and a half hour ride to resort between several active volcanoes is very scenic

Arrive at resort for welcoming drinks and appetizers. Unwind in our dockside restaurant while waiting for the boats to come in with fishing reports. Dinner is served between 6:30 and 7:30 PM. First Dinner arrival evening Snapper (Fried or Veracruzana) Mashed Potatoes and Steamed Vegetables. Flan for Dessert.

Day one

Wake up knock on your door 5:30 AM with Coffee and Orange Juice. Please make your Coffee in front of waiter or waitress and for the rest of your trip we will have it premade for you with the right amount of Cream and Sugar before we wake you up. Breakfast: For a taste of Guatemala we recommend a Typical Plate that includes Chorizo or Bacon, Fresh Eggs, freshly made Tortillas, Fresh Cheese, Fried Plantains with Fresh Cream for dipping.

We have a full selection of yogurt, Breakfast Cereals, Fresh Baked muffins along with some Big Breakfasts that are more what you would see in the United States

Boat leaves dock between 6:30 and 7:00 AM

Water, Sodas, Gatorades, One case of Gallo beer and one bottle of Rum Flor de Caña included. 

10:00 AM Fresh Fruit and Snacks

Noon lunch which hopefully can be prepared from something we have caught. We prepare hot lunches on the large boats and the Monkey Business boats lunches range from Fresh Fish Sandwiches, Ceviche and Sashimi to Fried Chicken and Potato Salad.

Return to dock roughly 4:30 to 5:00 PM where Frosty Beverages and Appetizers are waiting Poolside. Again dinner will be served between 6:30 and 7:30 depending upon your preference. 

 

Bar and restaurant closes at 10:00 PM normally.

Day two and Day three of Fishing  will follow the same schedule as Day one

On all Lay Days  lunch will be served at one of the pool bars. (your preference) with Breakfast and Dinner served dockside. Massages manicures and pedicures are available.  Mariachi band for $150.00 an hour. Lots of local Tours and cool stuff to see.

Menu

Day 1

Breakfast: 

Chapin or typical plate which includes Sausage or Bacon Plus Eggs anyway, Fresh Tortillas, Fresh Cheese, Fried plantains with Fresh Cream Dipping sauce and Black Beans.

Lunch:

Fresh Fish Sandwich with Potato Salad, Chips and Freshly made Guacamole. We will also make Ceviche with Fish the instant it hits the deck to be available throughout the rest of the day

 

Dinner

Catch of the day cooked anyway you like served with cheese and shrimp stuffed Guicoy (small round zucchini) and vegetable salad. Strawberry crêpes for dessert

 

Day 2

Breakfast:

Banana Pancakes with Honey and Fresh Fruit, side orders of Eggs and Bacon.        No bananas allowed on boats  (warning that once you eat a Guatemalan banana you may not eat them in the states anymore)

 

By day two and three you have figured out what you would like for lunch and realize that we are ready and willing to prepare anything from hamburgers to Grilled Chicken Breast to Shrimp a la Plancha.   Captain and Mates work hard to provide great meals almost like they are trying to compete with our kitchen😀

 

Dinner:

 Jumbo Shrimp cooked anywhere you like(when we say Jumbo we are talking five shrimp to a pound) with Loaded Baked Potato and Steamed Asparagus. Ice cream for dessert.

 

Day 3

Breakfast:

Spinach & Mushroom Omelette with Holandesa Sauce,  home made Hash Brown and Toast.

 

Dinner Last Night:

Churrasco which means we grill out on the dock . Steak, Chicken, Sausage, fish are all on the grill plus corn ,avocados and Jalapeños.

 

Some dinner meals that can be substituted for anyone of these is

  1. Shrimp or beef lasagna with fresh garlic bread and salad.

  2. Imported steaks, loaded baked potatoes and fresh garden salads are another great option.

  3. Creamy Coconut Shrimp, Vegetables Infused Rice and Grilled Asparagus.  (Shrimp marinaded in fresh coconut milk) all ingredients fresh.

  4. Shrimp and Cheese stuffed Cannelloni Pasta with Salad and Fresh garlic bread.

  5. Seafood Soup (1/2 Snapper, Shrimp, Calamari, Clams and Mussels)

  6. Caldo de Gallina (Guatemala typical)

(Fresh hen Chicken soup, potatoes, carrots, guisquil, cabbage etc. served with grilled chicken and rice

  1. Shiskabobs (Steak, Shrimp and fish). W/ Guicoy (small round squash) stuffed with cheese and Vegetables infused Rice.   Meal always proceeded w/ tortilla soup.

  2. Fettuccine Alfredo w/ Shrimp and Mushrooms.

  3. Pasta Marinara (Shrimp, Calamar, Clams and mussels)  in red Salsa

Not included 

Top shelf liquor(Single malt scotch/aged tequilas/fine wines)

Tips for boat crew (we recommend between $150 and $250 per boat per day)
